Chicory

Chicory, Cichorium intybus, native to Europe, grows wild throughout North America. It is also known as Ragged Sailors - because the flowers are at their best in the morning but begin to look ragged by noon. This and their blue hue gave rise to this colourful name. A perennial herb, Chicory is cultivated for use as a coffee substitute.
